Vanilla Cupcakes with Cream Cheese Frosting and a celebration

First things first, which is celebrations. We are celebrating 25000 hits. Yay!! And a big big thank you to all those who have made it possible.

I am not only over-whelmed but also honoured with the love that you guys have shown for me and Tadka Masala, so much so that I do not have words to describe this feeling and I would just say thank you all once again and please keep coming over and showing your love and affection.

Now, what is a celebration without sweets and what is a celebration without cake, right? So, I decided to make a cake but just then I thought of these cupcakes moulds I had bought earlier, the mini ones. They are so damn cute! So, decided to use these cuties and settled on cupcakes for celebration.

Initially, they were Vanilla cupcakes with chocolate frosting but then I found cream cheese at the store where I went to buy cupcake liners. So, vanilla cupcakes with cream cheese frosting it is now.

Cake Flour

Ingredients

  • All purpose flour / maida – 1 cup
  • Corn starch / cornflour – 2 tablespoons

Method

  1. Remove 2 tablespoons of flour from the 1 cup flour.
  2. Now, replace the removed flour with cornflour.
  3. Sieve 4-5 times and store in a airtight container.

Vanilla Cupcakes

Makes – 6-8 cupcakes

Time required – 30 minutes + cooling time

Ingredients

  • Cake flour – 1 cup
  • Powdered sugar – 1/2 cup
  • Milk – 1/2 cup
  • Oil – 1/4 cup
  • Vinegar – 1/2 teaspoon
  • Vanilla extract – 2 & 1/2 teaspoon
  • Baking soda – 1/4 teaspoon
  • Baking powder – 1/2 teaspoon
  • Salt – 1/4 teaspoon

You can substitute milk and vinegar with 1/2 cup yogurt.

Method

  1. Sieve cake flour, baking powder, baking soda and salt to mix them well. Add sugar to this, mix and keep aside.
  2. Now, mix all the wet ingredients (milk, vinegar, oil and vanilla extract) and mix them well with a whisk.
  3. Make a well in middle of the flour mixture and pour in the wet ingredients.
  4. Whisk them well so that they are no lumps in the batter but do not overwork the batter.
  5. Pre-heat the oven to 170 degrees.
  6. Fill the cupcake liners to 2/3rd and bake for 15-17 minutes at 170 degrees.
  7. Place them on a wire rack for them to cool down completely before you frost them.

Cream cheese frosting

Time required – 10 minutes

Ingredients

  • Philadelphia cream cheese – 80 gms
  • Icing sugar – 1/2 cup
  • Lemon juice – 2-3 drops
  • Sprinkles – there is no such thing as more or less sprinkles, use as much or as less you want.

Method

  1. Mix the cream cheese and powdered sugar together and add lemon drops and mix gently again.
  2. Once the cupcakes have completely cool down spread the frosting on them and sprinkle them.
